<span style="font-size: large;">Pulite i fiori di zucca tamponandoli leggermente con carta da cucina inumidita. Eliminate il calice ed il pistillo, quindi ricavate i petali con delicatezza.</span></div>

<span style="font-size: large;"><i> Montare con le fruste le uova insieme allo zucchero semolato fino ad ottenere un composto chiaro e spumoso. Aggiungere la buccia grattugiata di un limone e lo yogurt al limone
continuando a montare con le fruste. </i></span><br />

il burro in un tegame a fuoco basso, quindi lasciare intiepidire.
Intanto dividere gli albumi dai tuorli. Versare i tuorli in una ciotola e
sbatteteli con una frusta a mano, poi unire il burro fuso a
temperatura ambiente e il latte a filo, continuando sempre a mescolare
con la frusta. </span><br />
<span style="font-size: large;">Unire il lievito alla farina e setacciare tutto nella ciotola con il composto di uova e burro, mescolare con la frusta per amalgamare bene gli ingredienti.</span><br />
<span style="font-size: large;">Successivamente montare gli albumi che avete tenuto da parte, versando poco alla volta lo zucchero
e quando saranno bianchi e spumosi incorporarli delicatamente al
composto di uova, con movimenti dall'alto verso il basso, per evitare di
smontarli. Scaldare sul fuoco
medio (non alto altrimenti non darete il tempo all'impasto di lievitare
bene durante la cottura e i pancake diventeranno troppo scuri) una
padella ampia antiaderente. Ungere la padella con poco burro da spandere sulla superficie con l'aiuto di un foglio di carta
da cucina. Versare al centro del pentolino un mestolino di preparato. </span><br />
<span style="font-size: large;"> Quando inizieranno a comparire delle bollicine in superficie e la base
sarà dorata, girare il pancake sull’altro lato per mezzo di una spatolina, come se fosse una crepe o una frittata, quindi fare dorare a sua volta anche l'altro lato, dopodichè il pancake sarà pronto.
Proseguite così con il resto dell'impasto e man a mano disponete i
pancake su un piatto da portata cospargendoli con abbondante granella di nocciole, cioccolato liquido, banana a fette e zucchero a velo. </span><br />
<span style="font-size: large;">Con
queste dosi dovrebbero formarsi all'incirca 12 pancake.</span><br />

Nella planetaria versate la farina setacciata, il lievito disciolto
nell’acqua ed iniziate ad impastare con il gancio. Unite il burro a
temperatura ambiente, un pezzo alla volta, ed impastate fino a quando
l’impasto sarà lucido, omogeneo, elastico e ben incordato.<br />
Unite lo zucchero, il latte ed il sale e impastate di nuovo fino all’incordatura.<br />
Mettete l’impasto in una ciotola, coprite con la pellicola e mettete nella parte bassa del frigo, quella più fredda, per 12 ore.<br />

Tirate fuori dal frigo il burro necessario per la sfogliatura e
lasciatelo a temperatura ambiente fino a quando avrà raggiunto la
temperatura di 14/15 gradi. Ci vorrà circa 1 ora.<br />

Preparare il burro per la sfogliatura. Mettete il burro tra due fogli
di carta forno e, con il mattarello, stenderlo in un rettangolo di
circa 25 per 20 centimetri, spesso circa 3 millimetri. Durante questo
passaggio il burro deve mantenere la consistenza del pongo; se si
ammorbidisce troppo, rimettetelo in frigo qualche minuto e poi
proseguite.<br />

Piegate i bordi della carta carta in modo da formare un pacchetto.
Rimettete in frigorifero, giusto il tempo di stendere l’impasto.<br />
Togliete l’ impasto dal frigorifero e disponetelo su una spianatoia
leggermente infarinata. Stendetelo formando un rettangolo, dello stesso
spessore del panetto di burro, di circa 50 centimetri per 22.<br />
Prendete il pacchetto di burro, eliminate la carta da forno e
disponetelo sul lato corto inferiore dell’impasto, avendo cura di
lasciare 1 centimetro libero di lato: il burro deve occupare circa i 2/3
inferiori del rettangolo.<br />
Piegate sul burro la parte superiore dell’impasto e sovrapponete la parte di impasto restante.<br />
Stringete con le dita i bordi della pasta in modo da sigillare il
panetto di burro all’interno della sfoglia. Ponete in frigo (nella carta
da forno) per 20 minuti il panetto ottenuto.<br />
Riprendete l’impasto dal frigo e procedete con le pieghe a tre, in questo modo <br />
Tirate fuori dal frigo e posizionate il panetto davanti a voi, con la
parte aperta sulla destra. Picchiettate con il mattarello per
distribuire il burro in modo uniforme e stendetelo in un rettangolo che
abbia il lato corto davanti a voi, ad uno spessore di 1 centimetro.<br />
Piegate verso il centro la parte inferiore della sfoglia, poi quello superiore.<br />
Girate il panetto di 90 gradi, sempre con il lato aperto sulla destra.<br />
Copritelo con la pellicola e mettetelo su un vassoio in frigo per almeno 40 minuti. E’ stata fatta la prima piega.<br />
Tirate fuori dal frigo e fate altre due pieghe seguendo i passaggi
sopra indicati. Dopo ogni piega rimettete in frigo per almeno 40 minuti.<br />
<b>Ore 12.30 circa</b><br />
A questo punto potete realizzare i nostri cornetti. Prendete l’
impasto e stendetelo sulla spianatoia appena infarinata nel senso della
lunghezza fino ad ottenere un rettangolo di circa 55×20/25 cm dello
spessore di 3mm circa (rettangolo lungo e stretto). Tagliate dei
triangoli isosceli con una base che misuri 8 centimetri.<br />
Fate un taglio al centro della base del triangolo di circa 1cm e
formate i cornetti arrotolando su se stessa la pasta, partendo dalla
base fino ad arrivare alla punta; più lungo sarà il triangolo, più giri
si riusciranno a fare e più belli saranno esteticamente i vostri
cornetti sfogliati.<br />
Terminate i cornetti in modo da lasciare la punta sotto il cornetto: in
questo modo verrà mantenuta la forma sia in lievitazione che in cottura.<br />
A questo punto ci sono due strade:<br />
1. Posizionate i croissant su una leccarda coperta con carta forno,
copriteli con la pellicola e fateli lievitare fino al raddoppio (circa 3
ore a 20 gradi). Spennellate con il tuorlo sbattuto e mischiato al
latte. Spolverizzate con lo zucchero a velo (e aggiungete se volete
della granella di zucchero); infornate a 220 gradi (statico) per 5
minuti, poi abbassate a 190 gradi e proseguite la cottura per altri 12
minuti circa, fino a quando saranno ben dorati.<br />
2. Disponeteli su un vassoio, metteteli in freezer e, una volta
congelati, metteteli in un sacchetto per alimenti. Quando si vorranno
mangiare, basterà tirarli fuori dal freezer 6 ore prima e proseguire
come indicato al punto 1.<br />
Quando i cornetti sfogliati saranno freddi, farciteli con la confettura di albicocche caramellate.</div>

<span style="font-size: large;">Mondate e lavate tutte le verdure eccetto le cipolle e tagliatele, tenendole a parte.</span></div>

<span style="font-size: large;">Pulite e tritate finemente le cipolle e fatele appassire in una
casseruola piuttosto ampia, con poco olio. Unite le carote e lasciate
cuocere a fuoco vivace per circa 7-8 minuti, mescolando di frequente.</span></div>

<span style="font-size: large;">Aggiungete anche le zucchine e continuate la cottura per altri 5-6
minuti, salate leggermente.</span><br />
<span style="font-size: large;">Sbattete le uova in un piatto con un pizzico di sale e un goccio di salsa di soia, cuocetele e spezzettatele </span><br />
<span style="font-size: large;">Cuocete gli spaghetti di soia lasciandoli immersi per qualche minuto in poca acqua bollente, scolateli e uniteli alle verdure e alle uova.</span><br />
<span style="font-size: large;">Condite con 2 o 3 cucchiai di salsa di soia, mescolate accuratamente
e lasciate insaporire a fuoco vivace per 2-3 minuti. Servite gli spaghetti ben caldi, accompagnandoli con una ciotolina di salsa di soia

l'uovo, poi una volta amalgamato aggiungere la buccia grattugiata di limone
ed il succo.</span><br />
<span style="font-size: large;">Infine aggiungere il lievito e la farina ed impastare fino ad ottenere un panetto morbido.</span><br />
<span style="font-size: large;">Far riposare l'impasto in frigo per 1 ora.</span><br />

uova e lo zucchero ed il burro ammorbidito e lo yogurt, lavorate il composto con le fruste
elettriche fino ad ottenere una crema omogenea. </span><br />

lamponi in una padella antiaderente, a fiamma
bassa, per 2-3 minuti o fino a quando la frutta non avrà rilasciato

Aggiungete lo zucchero a velo, il succo di limone filtrato e mescolate
con una frusta finché il tutto si sarà ben amalgamato, quindi lasciate

ottenuto un composto sabbioso, unite anche lo zucchero a velo, le

volta ripreso l’impasto sistemarlo su una spianatoia leggermente
infarinata, stenderlo con il matterello e poi tiratelo fino ad ottenere una

Mettere un filo di olio extravergine di oliva in una padella antiaderente dai bordi alti e far soffriggere la cipolla tagliata a julienne, unire anche l'aglio e fare rosolare gli ingredienti per qualche min. <span style="font-size: large;">Versare lo zucchero e l'acqua in un tegame e metterlo sul fuoco a</span><br />
<span style="font-size: large;">cuocere per 2 o 3 min., affinchè lo zucchero si sciolga, poi togliere dal fuoco e lasciare raffreddare.</span><br />
<span style="font-size: large;">Mondare e lavare le fragole, tagliarle a pezzetti e renderle in purea con un frullatore ad immersione. Mescolare alla purea di fragole lo sciroppo di zucchero. Mettere il composto in un contenitore lasciato precedentemente a raffreddare in frigorifero, poi metterlo in freezer ricordandosi di riprendere il sorbetto ad intervalli di 30 min. per mescolare il composto con un cicchiaio, questo farà in modo che la superfice non cristallizzi.</span><br />
<span style="font-size: large;">Ripetere l'operazione ogni 30 min. per almeno 4 ore. </span><br />
<span style="font-size: large;">Il sorbetto deve essere cremoso, per ottenere una buona riuscita mescolatelo spesso.</span><br />
<span style="font-size: large;">Infine servitelo con fragole fresche ed un ciuffo di menta.</span><br />
